How to cook Nigerian Egusi Soup with Spinach.

Nigerian Egusi Soup can be prepared with a wide variety of vegetables viz:

  • Ugu (Nigerian Pumpkin leaves)
  • Bitter leaves
  • Okazi (Afang leaves)
  • Uziza leaves (false cubeb)

But when you leave the shores of Nigeria, you may not find the above-mentioned vegetables in your new country. The next best vegetable to use is spinach. So on this page, I will share how to prepare Egusi Soup with Spinach. If your tastebuds are accustomed to the vegetables for Egusi Soup listed above, it will take you a while to get used to using spinach to prepare Egusi Soup.

Nigerian Egusi Soup with Spinach Ingredients

  • 3 cups ground egusi
  • Beef (Ribs)
  • Stockfish
  • Red Palm Oil
  • Crayfish
  • Peppers
    • Habanero peppers (to your taste)
    • Sweet peppers
  • 3 onions
  • 2 big seasoning cubes
  • Spinach
  • Uziza
  • Salt (to taste)

Notes on the Spinach

When using spinach to prepare Egusi Soup, you do not need to do much because it is just like using ugu to cook Egusi Soup.

  1. Because spinach contains lots of water, you may need to steam it for a bit and then throw away the water. This spinach water has a tendency to ruin the taste of Egusi Soup.
  2. You may have to reduce the quantity of spinach you add to the Egusi Soup because spinach has a strong kind of sweet flavor.
